Italian Recipe of this week -- "Pollo alla cacciatora con olive"

Pollo alla cacciatora con olive (Ada Boni: Il talismano della felicita')
Ingredients for 6 people: 2.20lbs of chicken - Olive oil - Garlic 3 segments - salt - pepper - dry white wine (half glass) - vinager (2 spoons) - black olives (40) - anchovies (2).
Put in a pam the olive oil with the garlic (whole segments). Once hot add the chicken in pieces. Add salt and pepper and let it cook until it gets a dark golden color.
Add half a glass of dry white wine, 2 spoons of vinager and 20 black olives (without their pits). Cut the remaining 20 black olives in very small pieces and add them to the rest together with the 2 anchovies (cut them in small pieces as well).
Let the white wine evaporate and then add half a glass of water. Reduce the flame to the minimum al let it cook until the gravy is dense and the chicken is cooked and juicy.
