Italian recipe of this week -- "Risotto gratinato"

Risotto gratinato (Ada Boni: Il talismano della felicita')
Ingredients for 6 people: 22 oz of rice - 0.3 lbs of thick ham - 7 oz of butter - 2 spoons of flour - 2 small glasses of milk - 4 spoons of grated Parmesan - 1 yolk - pepper - salt - nutmeg.
Cook the rice in salted water and when is "al dente" just drain and pour it into a casserole joining 5 oz of butter and the ham cut in dices and let reit rest.
You will create a "besciamelle" sauce in a pot with 2 oz of butter, the flour and the milk. Jut put all the ingredients together and let the sauce boil always stiring and squeezing the possible flour nust created so that at the end the sauce is perfectly smooth and creamy.
Once the sauce is ready you will pour the rice inside together with a yolk, the grated parmesan, the nutmeg, pepper and not too much salt.
Stir well and pour it into a pam. after flattening the surface you will put it in the ovin (450 degrees) for about 10-15 min (check the crust).
